What to do with a pound or two of sweet potato?  Make Moroccan Sweet Potato Soup!

What to do with a pound or two of sweet potato

2 Onions
3 Garlic cloves
Sweet Potatoes
White Potatoes
4 c. Veggie Stock
1 t. Cinnamon
1/2 t. Cardamom
1 t. Cumin (Mo-Smells like Cumin)
Handfull of Green Peas
Salt and black pepper to taste
Mint (optional)
Lemon juice (optional)

Saute the onions and garlic in a wee bit of olive oil.  Once soft, about 5-10 min, add a tablespoon or two of the stock, the cumin, cardamom and cinnamon and heat until you smell the spices.  

Onions in sautee

Add the onions, sweet potatoes, white potatoes, carrots and stock in a slow cooker. 

Cook away

Cook on low for 6 hours.  At the 6th hour, add in the handful of peas and cook for one more hour. Salt and pepper to taste.  Serve over some rice or other grain like farro, quinoa or barley.  Top with mint and a squeeze of fresh lemon juice.  Yum!

    I’ve been having problems with spam blogs, too.. and a friend of mine recently had problems with someone stealing and posting pictures taken from my friend’s blog. And for a while, this person actually refused to remove the pictures or at least identify where they were taken from. We decided that it’ll be easier to just watermark our pictures.. dealing with stubborn, ignorant people can be so frustrating at times *grrrr*
