Cooking with DKM – Spring Rolls
So, it was hot here this weekend and when I don’t want to heat up the house cooking, I make spring rolls. They are super easy!
Get your stuff together that you’d like to add. Today I have some butter (bib or Boston) lettuce, asparagus, hearts of palm, carrots, rice noodle strings and cilantro. Rice paper rounds are found in Asian food markets.
You soak the rice threads in hot water for 10 minutes and set aside. Once you are ready, you soak the the rice paper sheet in warm water for 30 seconds.
Add your ingredients and then roll up as you would roll a burrito.
Serve with a dipping sauce and enjoy. This dipping sauce is made of 50% lime juice and 50% soy with fresh ginger and minced garlic
Make some extras for lunch!
Celebrate Poetry Month

Pale gold and crumbling with crust
mottled dark, almost bronze,
pieces of honeycomb lie on a plate.
Flecked with the pale paper
of hive, their hexagonal cells
leak into the deepening pool
of amber. On your lips,
against palate, tooth and tongue,
the viscous sugar squeezes
from its chambers, sears sweetness
into your throat until you chew
pulp and wax from a blue city
of bees. Between your teeth
is the blown flower and the flower’s
seed. Passport pages stamped
and turning. Death’s officious hum.
Both the candle and its anther
of flame. Your own yellow hunger.
Never say you can’t take
this world into your mouth.
