Dutch Baby

Jimmy’s Dutch Baby Pancakes – Found on Orangette

For the pancakes:
4 Tbs unsalted butter
4 large eggs
½ cup all-purpose flour (I used rice flour)
½ cup half-and-half

For the topping:
4 oz butter
Juice of 1 lemon (I used a Meyer lemon – oh so tasty)
Powdered sugar

Preheat the oven to 425 degrees Fahrenheit. Divide the 4 Tbs butter between two 6-inch cast-iron skillets, and melt it over low heat.

In a blender, whir together the eggs, flour, and half-and-half.

Pour the batter into the skillets over the melted butter. Slide the skillets into the oven, and bake for 25 minutes.

Remove the puffed pancakes from the oven, transfer them to a plate or shallow bowl, and pour on clarified butter, sprinkle on lemon juice, and dust with powdered sugar. Serve immediately.

Serves two.

  7. Happy Mardi Gras! My Mommie’s mouth is watering because she LOVES dutch baby pancakes. But she doesn’t cook them herself, she orders them from The Original Pancake House. But it looks EXACTLY like yer photo. And the same lemon/butter/powdered sugar topping. YUM!

  8. Happy Mardi Gras! Purrty toes Sophia. They look like Boni and Mini’s toes only purrtier cuz you’re not a sisfur of mine. heh heh Do Fi and Lando both have finery like that? It’s cool. I’m not sure what a pancake is exactly but it must be a food cuz it’s making Mom drool. (She’s funny lookin when she drools. heh heh)

  11. Have to agree with Kimo and Sabi — after all, if tin whistles are made out of tin, then what are Dutch baby pancakes made from? (As long as it’s not Soylent Green, I guess it’s OK)

    Doesn’t matter — they look delicious. My wife just saw Meyer lemons in the supermarket, so now we have a reason to get some.

  14. Mmmm, pancakes! We saw the Get Fuzzy comic strip where Bucky Cat wrapped them around himself to keep warm, but we think we’d rather eat them instead. We like to try new foods, and pancakes sound good.
