This week were cooking from Fresh from the Farmer’s Market – Winter
Eeek – Onion revolt!
Soaking the babies – The cookbook calls for limas, but who could resist these cute little Red Nightfalls from Rancho Gordo.
Note: Walk, Run or Hop to your farmers market to get beans from Rancho Gordo – they are the very best. They do also have an online store.
Hanging out in the slow cooker – come back in 6 hours!
3 cups dried beans (I used Red Nightingales) soaked overnight in cold water, then drained
4 cloves of garlic
4 cups veggie stock
1 fresh bouquet garni (fresh bay leaves, sprigs of thyme, parsley and rosemary)
Salt and pepper to taste
Sautée the onions & garlic for 5 min until just soft, put the beans, onion, garlic, stock and bouquet garni in a slow cooker for 6-8 hours or until all the beans are tender, season with salt and pepper in the last 10 min or cooking. Discard the onion, garlic & bouquet garni. Enjoy!
