Lots of snoopervising to be done this souper Sunday!
DKM Nosh – Veggie Stock
Making stock is super easy and oh so much tastier that those cans…
Here’s what you need:
Plus one organic garbage disposal to clean up the trimmings
Cook away my precious
Leeks (chunked)
Onions (chunked)
Fennel (chunked)
Garlic (crushed)
Carrots (chunked)
Celery (chunked)
Parsley (whole, stems and all)
Thyme (whole, stems and all)
Bay Leaf
Olive oil or butter
Toss the fennel, onions and leeks in a stock pot with oil. Sautee until soft, about 10 min. Add in the rest and sautee for another 10 min or so. Add 16 cups of water, bring to a boil then simmer for 2 hours. Strain so you get every last drop of liquid.
Simmer till you reduce by half – skim off any film from the top during reduction. Makes 8 cups of veggie stock.

PS you’re totally right about your post below. Free range, humanely is the only way to eat meat. Mommy says even tho it financially costs more, it saves more than that.
