DKM Bento

Green pea curry; Rice; Escarole; Cucks, snow peas, mandarins and dried blueberries for the salad, lime ginger vinaigrette

Bento 3/22

Green pea curry from Crisp by Michele Cranston (slightly altered to accommodate what I had in the fridge)

Olive oil
2 t. brown mustard seeds
1 t. grated fresh ginger
1 leek, sliced
Sea salt
1 t. ground turmeric
1 t. ground cumin
½ red chili, seeded and finely chopped (add more or less to your taste)
2 large ripe tomatoes, cut into chunks
½ c. water
1 2/3 cups peas (it called for fresh, but I had some frozen I needed to use up)
2 T. finely chopped mint
Salt and pepper to taste

Heat oil in a deep frying pan and add mustard seeds. When the seeds begin to pop, add the ginger, onion and a little sea salt. Cook until the onion is soft. Stir in the turmeric and cumin, cook for 1 min. Add the tomatoes and water simmer for 2 min, and then add the peas and mint. Cover and cook for 10-12 min, season when peas are soft and serve over rice. Enjoy!
