DKM Bento - Warm potato-tomato salad with Dijon vinaigrette

Bento 1/16 - Warm potato-tomato salad with Dijon vinaigrette

Potato-Tomato Salad, Red Leaf, Toasted PB&J, Onion Soup

Warm potato-tomato salad with Dijon vinaigrette from Casual Cooking (adapted to what I had in the fridge)

Vinaigrette
3 T. Dijon mustard
2 T. red wine vinegar (I used cabernet vinegar)
½ t. sea salt
½ cup olive oil
Fresh ground black pepper

2 pounds Yukon Gold potatoes, skin on, cut into 1 inch pieces (I used fingerling potatoes, ‘cause that what’s in the fridge)
2 cups diced tomatoes, skin on, including seed and juice
½ cup finely minced red onion
2 t. finely minced fresh tarragon (who am I to question Mr. Michael… but I left mine chiffonade and used 2 T. )

Make the vinaigrette: in a bowl, whisk together mustard, vinegar, oil, salt and pepper – I used an immersion blender so the vinaigrette is emulsified.

Boil potatoes in salted water until done – toss potatoes, tomatoes & tarragon in vinaigrette and serve! I dumped mine on a pile of lovely red leaf lettuce – Delish!
