What do you do when you’ve had a root canal and are working from home on a Friday?  You make Vegetable Tian in the slow cooker.

Vegetable Tian

Vegetable Tian from “Fresh from the Vegetarian Slow Cooker” (altered by DKM)

6 shallots, halved
2 garlic cloves, minced (I used 4 - I’m half Italian, it’s in my blood)
1 & 1/2 cups baby carrots (I used regular carrots - my baby carrots have evaporated, funny that)
1 pound small red potatoes, quartered (I used fingerling potatoes)
1 small red bell pepper, diced (I used 4 baby bell peppers)
1 & 1/2 cups cherry tomatoes, halved
1/4 cup vegetable stock (when I make this next time, I’m going to use sherry.  I think it will add another layer of flavour)
3 T. olive oil
1 & 1/2 t. dried herbes de Provence (I used 3 t.)
Salt and black pepper to taste (I also added a pinch of red pepper flakes - the other half is Spanish ;0)  - Jess add two)
1 cup fresh bread crumbs (I excluded this part)

Dump everything in the slow cooker - stir to coat all veggie well.  Cook at low for 6-8 hours.

In a small skillet, toast the bread crumbs in olive oil over medium heat until golden brown. Set aside.  When the tian is done, sprinkle the bread crumbs over the top (I excluded this part).

Serve & enjoy!

And it is so very pretty! It was nice of the buns to share their basil with you. :)

Sorry ’bout the root canal. I had one a couple years ago and that sucked. On the other hand, the vicodin was delightful! ;-)

For some reason my veggie stuff never comes out looking that great! LOL! You have the cabinets and condiments that make my mouth water. Well, I know what’s going to be cooking tomorrow at our house. Thanks for sharing!

That looks good. The Woman wants to know if you make your own vegetable stock or buy it, and if you buy it, does it have anything mushroom in it? Mushrooms would kill her. :::makes mental note of that:::

Mine Dad can’t haf “gluten: wheat, rye, barley, or oats” so we’s always lookin fur new recipes. He’s a furry good cook cuz, as mom says, he can take a recipe an adjust it to taste, where she just knows if it’s good or not.

Mom says they had two choices when they got married: They could eat well OR she could cook! She just doesn’t haf the knack.

I fink Thumper better watch out now that Max knows bout her an mushrooms!

PS Mom hadded a root canal bout 15 year ago an they had to do it again two years ago to the same toof. Not fun at all. Also, nice blue sky! We finally got some snow. Usually, we’re sick of snow by now, but not this year!

I wish my pantry could look as lovely as yours! Wow! The bottom of my fridge was worst than yours recently, when wine spilled all over the fridge, the walls, the shelves, under the drawers……….. it was bad.
With seven kids, I fear having an organized anything is not in my cards for many, many years, and hopefully when they are gone, I will have so many grandkids around that organizing is still a waste of effort!
