It’s a tough job but some cats gotta do it! First, I inspect her breakfast to make sure she is eating.

Thanks everyone for the well wishes. I’m home with an assortment of new holes and Sophia has been cleaning me non-stop since I walked in the door.

I was going through old files and found this photo of my Himalayan, Charlie.  He was such a love along with his sister. The breeder didn’t want him because his face was not smushed enough. He lived a good long life.

Soaking the babies – The cookbook calls for limas, but who could resist these cute little Red Nightfalls from Rancho Gordo.
Note: Walk, Run or Hop to your farmers market to get beans from Rancho Gordo - they are the very best. They do also have an online store.

Hanging out in the slow cooker – come back in 6 hours!

Sleep well for 6 hours

Yum!

Garlic beans 

Garlic Beans

3 cups dried beans (I used Red Nightingales) soaked overnight in cold water, then drained
1 onion
4 cloves of garlic
4 cups veggie stock
1 fresh bouquet garni (fresh bay leaves, sprigs of thyme, parsley and rosemary)
Salt and pepper to taste

Sautée the onions & garlic for 5 min until just soft, put the beans, onion, garlic, stock and bouquet garni in a slow cooker for 6-8 hours or until all the beans are tender, season with salt and pepper in the last 10 min or cooking. Discard the onion, garlic & bouquet garni. Enjoy!

What do you do when you have a fridge of stuff that’s almost past it’s prime? You make Fridge Sauce!

Fridge Sauce

…and then you dump it in a baking dish with pasta, cheese and other gooey stuff to make baked pasta. Good for a cold Saturday night.

Baked Penne

Sauce

Olive oil
2 leeks
1 carrot
Center of the celery
4 cloves garlic
½ fennel bulb
1 cup of mushrooms
2 cups of tomatoes
Handful of herbs
½ cup white wine
½ cup veggie stock
3 T. tomato paste
1 can chopped tomatoes
Salt and pepper to taste

Baked pasta

2 cups of sauce
1 cup cooked pasta
2 medium sized mozzarella balls, cut into chunks
1 cup ricotta cheese
½ bag meatless meatballs
½ cup to 1 cup of parmigiano-reggiano cheese

Sautée the onions, carrots, celery, and garlic in olive oil – 5-10 min, toss in the mushrooms, tomatoes, wine, stock, tomato paste half of the herbs, and salt and pepper. Simmer for 30 min to an hour until done.

Dump everything into your baking dish, mix well, and bake at 350 for 40 min. to an hour. Enjoy.
