Hot & Sour Soup from Fresh from the Vegetarian Slow Cooker (DKM-ified)

1/3 cup dried shitake or cloud ear mushrooms (re-hydrated and sliced)
Can of bamboo shoots, thinly sliced
4 roasted garlic cloves, chopped
1 1/2 Tbsp ginger, peeled and minced
4 cups of veggie stock
2 Tbsp rice vinegar
2 Tbsp tamari or other soy sauce
1/2 Tsp chili paste (or more if you like heat – yes, you, Jessica)
Salt & pepper to taste
4 oz. diced tofu
1/2 cup peas
3 Tbsp minced scallions
1 Tbsp toasted sesame oil

Place the mushrooms, bamboo shoots, garlic, ginger, stock, vinegar, tamari and chili paste in the slow cooker. Cook on low for 6-8 hours. One hour before it’s done toss in the tofu and peas. As serving, add in scallions and drizzle with sesame oil. Enjoy.

Arroz con garbanzos

Arroz con garbanzos & clementines for lunch.  As requested…

Rice with garbanzos

1 medium onion, dice
2 stalks of celery, dice
1 carrot, dice
1 red potato, dice
I can of garbanzo beans
2 cups stock (I used Organic No-chicken Broth this time – it’s pretty good!)
½ cup of sherry or dry white wine
1 cup of medium or short grain rice (like a risotto, paella or sushi rice)
Pinch of saffron threads
Fresh tarragon
Lemon wedge

Toss the saffron in the stock. Sautée the onion, celery and carrot until soft (5-10 min) in olive oil then add in the potato & wine and sautée for another 5 min or so. Toss in the beans, stock, rice and herbs; cover and cook on low for 30 min or until rice is done. Top with some tarragon leaves & a squeeze of fresh lemon juice. Enjoy.

I like to serve with a big salad of butter lettuce, sliced green olives & clementines in a sherry wine vinaigrette. YUM!

Cooking with DKM - Cannellini Stew

Cannellini Stew

White Bean Stew (veganized version of a recipe from Zesty)

3 ½ cups of canned white cannellini beans (white kidney beans), drained & rinsed
5 tomatoes, chopped
1 ¾ cups canned chopped tomatoes
2 leeks, roughly chopped
8 garlic cloves, whole (I used roasted cloves)
1 Tbsp thyme (I used a big handful of fresh)
1 cup white wine
Italian parsley, chiffonade

Set oven to 350°, toss all into an ovenproof casserole dish. Bake for 1 hour, toss on some parsley, and serve with a big chunk of good bread. Enjoy.
